Four Ingredient Catalina Chicken

Like most moms, I am exhausted by the time I get home from work and it’s time to cook dinner. Between my work schedule and the time it takes to prepare dinner; we often times are not even eating dinner until 7 O’clock. Recently, I have started to make ahead some dinners on Sunday just so I don’t have to spend as much time cooking on Monday or Tuesday night.

Don’t get me wrong, I love cooking and baking; it just gets hard during the week when it feels like there’s not enough time in the day.

I constantly find myself heading to Pinterest to look up “easy chicken dishes”, or “weeknight dinners”. There’s an entire population of moms out there wanting to share their quick and easy meals with the world. Apparently, now I am one of them. I love easy week-night recipes that you can just throw together and have made in less than an hour. This Catalina Chicken recipe is one that’s perfect for busy days when you aren’t sure what to make and it only requires 4 ingredients! (5 if you include serving it with rice) Enjoy!

Ingredients
Boneless, Skinless chicken breasts
1 bottle Catalina or French salad dressing
1 packet of onion soup mix
1 jar of Apricot preserves

  1. Pre-heat oven to 350
  2. Mix together half of the bottle of Catalina dressing, the entire onion soup mix packet, and half of the jar of preserves
  3. Place thawed chicken in a lightly sprayed casserole dish
  4. Pour mixture directly over the chicken breasts
  5. Bake uncovered for 30-40 minutes until chicken is cooked through
  6. Pair with rice or pasta and enjoy!
