Gluten- Free Snickerdoodle Blondies

Good morning! I hope everyone is staying well and being safe. Since the pandemic is still going on and my family is continuing to avoid going anywhere; I figured it’s a great time to try some new recipes.

We are chocolate lovers through and through in our house. There’s rarely a dessert that we make or eat that doesn’t include some sort of chocolate variation. However, we all need to broaden our horizons, and I absolutely love the flavor of cinnamon. Cinnamon rolls, cinnamon French toast, snickerdoodle cookies; all examples of the cinnamon flavorings that I can’t get enough of.

With fall fast approaching; we are going to be seeing a lot more cinnamon and pumpkin recipes and treats here shortly. (I know! I feel like this is the first summer in many many years that I’m not ready for it to be over) So why not create something that is normally chocolate flavored and turn it into a cinnamon sugar recipe instead. And here is where we come up with Snickerdoodle Blondies. A vanilla brownie with the added cinnamon sugar flare.

I previously made a traditional chocolate gluten free brownie that came out delightful, So, how about a gluten free blondie this time around? This recipe did come out a little shorter than the normal large and tall brownies I’m used to, but that can be easily fixed by simply doubling the recipe and still baking in an 8×8 baking pan. While, I know some people have said gluten free treats come out differently textured; these babies turned out perfectly like a normal blondie/brownie. Hope you enjoy! Warning: you may eat the whole pan in one day.
