Sugar Cookie Fruit Pizza

One thing I love about summer is the food that we get to enjoy. Aside from the delicious BBQ and cookout dishes, there’s the fresh fruits and light desserts that just go so well with the summer heat. I have been making this Sugar Cookie Fruit Pizza recipe for a few years now and I think I’ve got it down to a science. It’s the perfect mix of sweet and fruity but isn’t too heavy after a big meal.

With the 4th of July approaching, I know that I will be making this at least once to bring with us to whatever party or gathering we end up at. For the 4th, I like to decorate the finished product to look like an American flag in celebration of the day. This recipe is super easy and is a big hit with adults and children alike. I mean, who doesn’t love sugar cookies?!

The Sugar Cookie Fruit Pizza doesn’t take long at all to make. Just a few simple steps and you’ve got something that looks like you spent hours on. It’s also one of those recipes where you don’t have to be afraid to let the kids help out. I’ve even made little individual sugar cookie pizzas before, so the kids can each have their own to decorate. A yummy dessert and a fun activity!

Sugar Cookie Fruit Pizza Recipe

Ingredients

1 Package pre-made sugar cookie dough

8 oz cream cheese, softened

2 TBSP powder sugar

1 tsp Vanilla

Fresh fruit of your choice (berries work best)

1: Pre-heat your oven to 350. Roll out dough on parchment paper lined cookie sheet (You can use whichever shape you like, rectangle or circle)

2. Bake according to the directions on the cookie dough package. Usually 12-15 minutes total. Don’t be alarmed if the cookie starts to brown, this works better when spreading the cream cheese mixture.

3. While the cookie is baking, beat together the softened cream cheese, powder sugar and vanilla. Set aside.

4. Let the cookie completely cool. You can start washing and cutting your fruit. I love to use fresh strawberries and blueberries for this!

5. Once the cookie has cooled, spread the cream cheese mixture on top.

6. Place the fresh fruit on top of the cream cheese mixture in any design you prefer. Serve immediately or refrigerate until ready to eat.

Note: This recipe is best if enjoyed the same day you make it, otherwise the cookie starts to get soggy.

    Gosh! This looks a lot better than the one I made. I ended up putting too many fruits on the “pizza” and the cookie ended up being floppy and a little soggy. I’ve learned my lesson now. Less is better. This recipe looks really easy. I think I’ll make it for a work potluck once we go back into the office after COVID-19. Thanks for sharing.
